Sushi Rice

Your great sushi starts here.
300 ml sushi rice
350 ml water
3 tbsp rice wine vinegar
1 tsp salt
2 tbsp sugar
Rinse the rice several times in cold water until the water is clear. Add the rinsed rice to the water and bring to the boil. Turn the heat down, cover with a lid and simmer until the water has evaporated. Once the rice is ready, put to one side with the lid on and let it rest for 15 minutes.

Meanwhile, mix the vinegar, sugar and salt together in a small saucepan and gently heat until the sugar dissolves, stirring frequently. Put the rice in a shallow, non-metallic dish and pour the room-temperature vinegar mix evenly over the rice. Carefully cut and fold the rice with a wooden spatula making sure not to smash the cooked grains. Now you are ready to roll the sushi! Try, for example, smoked fish sushi, or rainbow trout roe sushi.
