Salmon and avocado tartare

This salmon tartare gives a different flavour to your party.
350g salmon
1 avocado
8g dried tomatoes
80ml olive oil
2 lemons (juice)
Tabasco
chives
salt
pepper

Sauce
2 anchovy fillets
2 egg yolks
1 tbsp mustard
1 / 2 lemon (juice)
120 ml olive oil
1 / 2 bunch of dill
1 / 2 bunch of parsley
Chop the raw salmon into small pieces and season it with salt, pepper and Tabasco.
Dice the avocado and dried tomatoes and mix in lemon juice, salt and pepper to taste. Prepare 4 metal or plastic baking forms or cups to help shape the dish. Line the forms with SAGA Cooking Paper.Spoon the tartare into the lined cups packing it in tight and put avocado with dried tomatoes on top. Remove the cups or forms before serving the meal

SAUCE
Mix all ingredients for the sauce together in a dish. Take 4 sheets of SAGA Cooking Paper and make piping bags. Fill each piping bag with sauce and place on the plate next to the tartare dish to let guests to garnish their dish themselves.
