Bacon-Potato Cake

Mashed potatoes meet bacon and herbs. Great with anything.
600 g waxy potatoes
50 g bacon
60 g butter
white pepper
fresh herbs
Peel, boil and mash the potatoes. Cut the bacon into small pieces and fry. Mix the bacon with the potato mash, butter and chopped herbs, and season to taste with salt and pepper. Make a 5-7 cm thick SAGA loaf and leave to cool. Put it into the refrigerator to harden. Cut into 1-2 cm thick slices and lay them on an oven tray covered with SAGA Cooking Paper. Bake at about 160°C (180°C) for a few minutes until hot.

Top with bacon and herb butter. Serve as a side dish to, for example, gratinated lamb fillets.
